Is it possible to run a video game console (in my case, Nintendo Gamecube) through the Motorola DCT 6412 front or rear inputs? If so, how do I access the picture/sound?

Unfortunately a game console will not work if you hook it up to a STB. It needs to be connected directly to the TV. Depending on your cable provider, they should have a section on their website for video connections. (I'm assuming you have one)
