Let's say that I have Dish Network now, but am interested in testing some of the info found here. My thought was this: Can I simply unplug my Dish receiver..plug in my PanSat...and with a little software be able to use the same dish and LBN to pick up Sat TV?

Yes, you don't need anything, just plug in your FTA (Pansat) receiver and make sure your receiver has the latest super bin which has the autoroll for Pansat and you are good to go and watch TV freely.
