I need some help with Xbox/PS2 setup

I am in the process of setting up my home theater system in the basement, and I have some of the basics set up, but I am upgrading and need some help with the cables.

First of all, my sound system is set up, I have 5.1, the cables are run through the walls and run into a basic A/V Receiver.
For video I have a projector, which is 20 feet away from the rest of the system, and it has a 2 VGA in's and an S-video, which I am not trying to use.

I have a ps2 which hooks up to the receiver for the audio, and the video right now is through an S-video cable that goes to the projector, that my dad split to attach a VGA connector.
http://home.comcast.net/~paul.speek/ps2.jpg (on the projector end) This somehow gets much better quality than the S-video attachment and we prefer this, however it is a hackjob, although trying to go directly through the vga cable, without the extension (we moved the ps2) did not get better results.

This is what we have right now and it works, our problem comes in because we want to add an XBox with a media extender that runs to the computer upstairs (right now we dont have TV) ,
how would we add the XBox to the equation?

Is the XBox video/sound port the same attachment as on the PS2? would it be an easy switch? or are we better off running 2 cables?

ALSO:
We are having trouble with the ps2 video settings (4:3/Full/16:9) that screw up with all the projector settings (4:3/16:9)
In all the combinations, we can never acheive the full screen, it is always too wide and never high enough, any outside solutions? ill get some pictures tomorrow
