Playstation 3 Sound Real Question

I'm having a hard time grasping the concepts of Linear PCM khz signals and what I'm supposed to be able to use.
I currently have a 5.1 set up on an Onkyo TX-SR805 and my Playstation 3 is hooked up via a 1.3 HDMI cable.
I would like to know if I should WANT Linear PCM 5.1 khz signals because if I go to my PS3's audio settings and "x" the boxes with 5.1 linear pcm I only get stereo sound out of my set up and my receiver displays MultiCh or 5.1 MultiCh. But if I "x" the Dolby Digital and DTS boxes it's surround sound and my Onkyo displays "HDMI Through / PCM fs: 48khz" even if I check the 2ch 192 khz and 176.4 khz options
Is the lack of MultiCh surround sound because I don't have analog multichannel speakers set up? I thought digital was better than analog so maybe I shouldn't be worried?
Any explanation would be great, sorry this is a console based question.

One thing that may help, is go into the PS3 BD settings and change it to Bitstream. Then let your Onkyo decode the signal. Good luck
