A Neophyte setup question

I went to the CEA Connections Guide but it didn't really answer my question.

My set top box (Motorola DCT6208) has just about every type of connection available except for HDMI but my receiver (Onkyo TX-SR703 ) and TV (Mitsubishi WS-55311) only have component video (no HDMI, DVI or IEEE 1394). I do not want to always watch TV with sound from the receiver (For news and what not, the TV speaker is fine for that) so this is my plan based off of that and the types and number of connections I have availible...

I will run component video and composite audio from the set top directly to the TV but I will also run an optical(or dig coax) audio line from the set top to the receiver. My thought being, most of the time I will watch the TV straight from the cable box but when I want to watch some thing in surround sound, I will turn of the TV's speaker and turn on the receiver? Is there any problem with doing it that way?

Honestly, what is the point of running the video through the A/V receiver?

I also plan to get a DVD burner\VCR combo machine and if the above wiring will work, I will probably hook it up the same way? Any issue with that?
