I need to connect the coax output from my cable box to my stereo RCA input jacks. I cannot find an adapter that will convert. Any ideas?

Coax output from your cable box is both video and audio.

Does your cable box have RCA outs in addition to coax out?

Does your TV have RCA outs?

The cable box and stereo are in different parts of the house. There is already a coax run that I can use but the areas are finished so I can't use a differnt type of cable.

You can use the coax run as a digital coax input if your cable box has a digital coax out and your receiver has a digital coax in. Just get a F type to RCA adapter on both ends. If not, you'd need two cables to function as L and R of stereo.
