Mayo or Honey de'sure sauce?

Hey, I am trying to duplicate at home a Subway Honey Mustard De gen ero something or other and I was wondering if I should use just regular mayo or get fancy and try to mix up some type of frenchy sounding sauce.

I also was watching the food channel, that Emeril guy and does anyone know what the hell blanching is?
