I want to know if I could hokk up 3 1600w max 800rms subs up to a mono block amp....if so what kind of wattage should the amp be?...Or would it be better to hook them up to a 2 channel amp instead...If so what kind of wattage should it be?

well it all depends on the impedence of the subs EX: dual voice coil or single voice. 4 ohm subs or 2 ohm subs the ohm load you send to and amplifier or the ohms of your subs is very important.

personally i don't like using multi channel amps on subs, i'd rather use a mono amp. what ucfsaxman said is information we'll definally need to help you out. got a budget?? also, electrical system, cuz if the subs are 800 RMS, you'll want to give them close to 2400 watts to give them their RMS ratings, which is a lot of power.
