I am under the impression that when you "Turn up your gain" You are actually lowering the Input sensitivity voltage? Is this correct?

If the gain is turned up it would be increasing the sensitivity, which would be decreasing the input voltage.

In a way, yes. Your not changing the voltage, you are just telling the amp what the voltage from the HU is. So when you turn the gain "up", you are telling the amp that there is a lower voltage coming from the HU and the amp will have to compensate for the weaker voltage.
