Is it better to find a 2 channel amp that can do 125 watts rms per chan or to find a monoblock amp that can do 250x1? Are there any advantages or disadvatages? Also what amp would yall reccomend that can do that kind of power at 2ohms?

The amp that you choose should fit your speaker configuration.
If you buy a sub with 2ohm dual voice coils, you can handle that 3 ways:
2 channels @ 2ohms each 1 channel @ 4ohms each 1 channel @ 1ohm each
Some amps are 1ohm stable, some are 2ohm stable and some are 4ohm stable.
