Im buying an Alpine HU for my 95 Talon...Im looking at either the CDA-9823 or the CDA-9825. The 23 has 2v outputs and the 25 has 4v outs. If I'm only going to be running a single 5-600w monochannel amp, I should be ok with the 2v's right?

Optimally, you'd do the 4V. More resistant to picking up noise, plus you don't have to turn up the gain as high, meaning the noise floor is reduced (amp doesn't introduce as much noise into the system). There's a pretty big difference from 2V to 4V.

Mmkie doke. Thanks alot. Anyone have any suggestions for an amp? I was looking at an MTX Thunder421D (420x1 @ 2ohms).

I'll be pushing a single DVC(4ohms/coil) 12" kappa.

The MTX is an excellent amp. JBL 300.1 would be comparable(but less power).
