Why is it that camcorders and digital cameras can see the infrared light emanating from an ordinary remote control?

because of the CCD sensor on digital cameras are sensitive to wavelengths above 700nm. That is the reason why the sensors on digital cameras are built with IR filters on top of the sensor.

If you are recording this infrared light with your camera, something is wrong or someone removed the hot mirror off your camera sensor.

That is of course if the remote control is pointed directly at the senosr and it will be recorded by the sensor as bright or "hot" spot.
