my directed 1100d has 2 sets of terminals which run parallel inside the amp, should I connect each coil to it's own terminals on the amp or just use jumpers to connect the coils on the sub and use one set of terminals on the amp?

yes

Either way would work for VC's in parallel although using jumpers would result in 50% less connecting hardware mounted on your box.

I'd go jumpers.

Just get some speaker wire(18+ gauge) and cut to lengths that will reach from one voice coil terminal to the other. Crimp on some female spade connectors and you're good to go. If you have one of them "fancy" subs with the push on connectors you may not even need those female spades.

Just remember positive to positive, negative to negative for parallel and one positive to the other negative for series.
