for head units go with alpine. They are very good quality and rarely ever have any problems. Just find one that you like and you should be fine. I cant seem to find the wattage rating for these subs do you have any idea what it is?

That amp will be good as long as 750 rms is close to the rms value of the sub. they say that your amp rating should be atleast 70% of your subs handling power. when wiring youll want to run both subs in series then put them together in parellel. like this.

option #2

well the watts are 1600 watts rms but i from what i read they dont need anywhere near that to perform to there maximum potential. and for wireing, am i only going to need 1 terminal for my box? thank you

No, they don't need that much, that's a thermal rating for the voice coil. It depends on the type of box you're using that determines how much power to feed them. Alpine, Pioneer Premier, and Eclipse make the best quality head units, not sure what voltage the Phoenix Gold amp can be set to as far as input sensitivity, but it's probably around 5V RMS, you're better off with an Alpine for that.
