4 channel head unit driving 2 speakers and sound interference...On a PediCab

I do bar hopping tours in Victoria BC, and have a loud stereo and would like to make it just a little more powerful.

I am looking to see if it is possible for my 4 channel car deck to use on just two speakers? And if there is anything special I would need to do with the wires. Also if anyone knows
about sound interference. I have 30 feet of electro luminesent lighting that goes around the bike which is powered by the same battery as the stereo and an Ipod connected to 18feet of mini audio cable going to the car deck. When I turn on the electoluminesent lighting there is a high pitched hum that is played through the speakers, and also if the mini audio cable touches the metal frame while the lighting is on there is a very loud squeak. My question is would a more interference resistant audio cable actually help, since the interference is coming from all around the frame of the bike. Thank you
