How much of a difference in quality is there between cheap and expensive digital multimeters? Would a cheap one like this http://cgi.ebay.com/NEW-7-FUNCTION-DIGITAL-MULTIMETER-AC-DC-VOLTAGE-TESTER_W0QQi temZ230043121001QQihZ013QQcategoryZ25412QQrdZ1QQcmdZViewItem
work for testing the voltage on an amp to set the gain? If not is there a cheap one that someone can recommend? Thanks

If you only want to measure DV voltage, then get a cheap one. If however you need to measure true AC, then spend a little more and look for one that states RMS.
You get what you pay for.
In your case, I'd invest in a quality DMM.

Will it just say it measure AC voltage or does it specifically state RMS? I was looking at http://subwoofertools.com/forum/setgain.asp at first and I'm not sure it's what I really wanted. That won't help me match up the preout voltage on my HU with the input sensitivity with the gain will it? I'm kind of confused about this whole deal. Is there any DMM you can recommend that isn't really expensive?

Do a search on eBay for "DMM RMS" and you will find some decent models.
Whatever you do, don't go cheap. It's not like it'll cost you over $100. DMM is very handy for troubleshooting around the house.
