I have a 2 channel amp to drive my front components and 1 mono amp to drive one 12" sub. I want to mount the amps to the rear deck where the back speakers are but some people say that they may get overheated. Any comments/opinion or this?

most amps are not suited for mounting upside down.
they will incur heat issues.

I guess if I fabricated some kind of bracket to mount the amps right side up with some space between the amps and the deck, it should be OK, right?

yup or mount them on their sides against the rear seats or sides of the trunk, or mount them on the floor of the trunk with a sheet of plywood cut to fit and covered with automotive carpet so they look flush mounted in the floor.
that gives you full use of the trunk, and still looks really cool.
