A ground is any large conductive body that absorbs a lot of charge. Since a car isnt grounded to earth (its on rubber wheels) the negative terminal of the battery is connected directly to the chassis. So you ground your amp to the chassis because it acts as a virtual ground, but its really connected to the negative terminal to complete the circuit.
