I use to be a chinese food chef. Actually I became main chef before I left. Kung Pao is so easy to make its rediculious. And if your in cali, eat at a mr. You's, they pack it up so much you can barely close the lid =).

well berny you should share the recipies. i love chinese food but every recipie i try sucks @ss it don't even taste close. like:

chicken chow mein
sweet and sour pork/chicken
orange/lemon chicken
egg rolls
chicken fried rice

do you know how to make those?
if so I'd really like to know how.

eggs

Mix it up, heat up some oil, pour it in, make it like a pancake. Then in a deep fryer, you put it in, and hold it down with the basket until it cooks.
....thats it. Then you make some type of stir fry to put on top.

Heres some basic asian ingredients.
fish sauce
hoisin sauce
oyster sauce
msg
sugar
salt
soy sauce
I use these ingredients to make some home dishes.

As for making orange chicken and lemon chicken, thats a whole different story. Mainly, it consists of.

Taking sugar, and burning it in the pot until it melts (turns brown). Then it consists of vinegar, orange peal, and some other stuff =). I stopped chinese food in may 05 so its been awhile. Never working at a chinese food restaurant ever again!

In Home Ec (yes, home ec), we made rice and it's pretty easy. First you cook the rice in water until it's gone, then you refrigerate it. You get some sausage and eggs, cook and scramble, chop up some asparagus (I think that's what it was), throw it all in the main pot, stir. Only takes about 10 minutes (after you cook the rice). Soy sauce as well. We also put some Worcestershire sauce over it to give it a cook, pulled out the chopsticks, and, well, it tasted pretty good. Experience from days gone by.

Or you can eat some better fried rice.
Cook rice. Refrigerate over night for me is best, but not necessary.

If using a wok, which is the best! Put in some oil, 2-3 eggs, mix, put in rice. The grease in the eggs and the eggs itself with separate the rice.

In a pot, pour in soy sauce, oyster sauce, hoisin sauce, sugar, msg, and mix until boiling. (make the sauce first)

Add sauce into wok until you get desired color, and taste. Add some chicken boullioun/msg/sugar to bring out the taste. Add black pepper if you want. Then last, add pea's and carrots.

If you want to make shrimp fried rice.
Unpeel shrimp, take out the sh!t. Get corn starch, mix with a little bit of water. Cover the shrimp in that. Then once done, deep fry the shrimp.
To make the shrimp fried rice, simply add the the shrimp after you mix the eggs and before you add the rice.

And the most important part, learn how to use a wok. :D, WOKS FTW!
