Optical cable produces sound lag

hello I just got a DVD player with 6.1 surround sound. it has connections for two other devices to hook into it. I want to hook my satellite up to it to receive surround sound. I hooked the sat. up using an optical cable and noticed that there was a difference between when the lips moved on the screen and when i heard the sound. so I switched over and hooked it up using rca cables and it seems to work fine. any reasons why i would get the lag?? I have the wires coming from the sat-out to the dvd-in. that is it.
also, the optical cable does not provide sound from all channels. example HBO and Starz works through optical. but cinemax doesn't. nor do the encore or hbo specialty channels. (hbo family-hbo comedy....)but all channels work through the rca cables
