How much accuracy difference between a regular DMM and one that reads true RMS? Going to set my gains using one and am wondering if the extra $$ is really worth it for an RMS one?

if the meter doesn't read AC voltage (true RMS) any AC signal will read "0 volts"

that means if you stick the probes in a live wall outlet, you'll read no voltage.
is that inaccurate enough for you?
:-)

if you're going to owork with any AC voltage at all and need to read what the voltage really is, you NEED a meter that can read true RMS.
