Nad 310, Blueray, LCD screen wiring help!

HI guys so I'm on the market for a new Blueray player since my DVD player is dead. As of now my system is hooked up like this:

-From DVD RCA video out to TV RCA video in.
-From DVD RCA audio out to NAD 310 video in.

It was perfect for me to have the sound and the video separate but now I want to take advantage of the HD on my tv and that means using HDMI and one of the players I've been tempted to purchase only has HDMI and coax.

Question is how the hell do I get sound on my Nad? I was thinking:

-HDMI to TV
-TV out (3.5mm) to RCA video in on the NAD to get sound.

Will it work? Will I loose a lot of audio fidelity? And should I be concerned about the audio level entering the amp? The manual does say to lower the volume on the TV if using the 3.5 out or optical out on an amp.

So basically the question would be.

If my amp only has RCA inputs, My DVD/Blueray only has HDMI and my TV has 3.5mm out jack how can I hook it up?

I heard people say that if you use HDMI and try to use the audio out it doesn't work.

As a final note I saw a Blueray unit that has HDMI and analog audio out. I wonder if it will output sound through both so I can hook HDMI to the TV and analog out to the Amplifier bet that gives a better sound.

Btw I'm only stereo no problem.
