I'm researching the component cabling for two uses:

AV receiver to projector.

Gamecube to AV receiver.

Should I use RG6 for both? How much should I expect to spend/ft?

RG59 is sufficient for RGB signals. You should consider a combination cable to insure cable electricals are balanced. (One signal doesn't get attenuated more than others causing a color shift)

Check out Belden/CDT part# 1164B,
Mini-RG59 version 1281S3 or 1283S3(precision)

Of course the cheapest way is 3 RG59's strung through the air. A much better way is to use the bundled cable with Crimped ends. You may find it cheaper to purchase ready-made cables if your distance is less than 25'.

The mini-RG59 versions require a special connectors and tool to install ends.
