I keep reading about receivers that upconvert but they never exactly come out and say what they can upconvert. Also if any exist which ones are they and which one would you recommend?

Stan don't confuse upconvert with upgrade in resolution. There is no way a device can put more resolution into a video signal. There are receivers that allow you to connect multiple video sources (be they 480 or 1080 resolution) to the receiver and then "upconvert" the signal so that you can connect to your TV via one HDMI or Component cable. It's only benefit is that you don't have to have an HDMI and a composit or S-video cable connection. Essentially it adjusts the input signal so that your TV can display it.
