Do all 7.1 surround sound systems support 5.1 + 2?

I have a low end JVC home theatre receiver (RX-D201) with 7.1. I got it because I thought I could run one seperate pair of speakers, and still have 5.1 for the home theater sound. But so far, I haven't figured out how to set-up/wire/specify this. What do I need to do or look for?
I want one pair of speakers in another room, so that we can play the radio there. And a simple 5.1 home theatre setup in the TV room.
On another note, originally I got the USB connection to work fine. But it stopped for no apparent reason. I've tried two computers, and they all say the USB output is working properly, but no sound comes out through the receiver/speakers. Anyone know a way to check this?
