S-video cables only carry video in the form of luminence and chroma. You can find the standards for HDMI by running it through a search engine.

HDMI is generally better. There may be some exceptions depending on equipment and type of signal. S-video can not carry an HD signal.

Think of it this way Adam in terms of quality,

Composit < S-Video < Component < HDMI

in this sense if your ultimate output, say your TV can handle HDMI, these receivers will upconvert anything connected to them, from Composit to S-video to Component up to an HDMI output and relay it to your TV.

However if your TV can only handle S-video or below, it doesn't really matter that your DVD has an HDMI output nor that your receiver upconverts to HDMI

Make sense?
