Would I be able to hook up a switch to the remote wire of an amp and cut the amp on and off as pleased?

Yes, you can. Just install a switch in the line and install it wherever you feel appropriate.

What if I have two amps hooked up. Would I be able to cut one on and off without affecting the other?

Well if you have 2 remote wires. Then you can put each on a seperate switch. But if you linkes the remote wires toether, and ran a single wire up front, then you can't turn them off individually.

So just run one remote wire to the radio, and then another one to whatever and just cut the one that's hooked up to whatever on and off at will? Or would I be able to run both wires to the radio and just switch one wire, or will that cut both of them off?
